Lemon & White Chocolate Cookies

 


There are a new favourite in my household. 
They are a soft cookie but you can 100% make them crunchy if that's what you prefer.

They are super easy to make and this recipe should give you around 30 cookies. 



Ingredients:
125g Unsalted Butter softened 
135g Light Brown Sugar 
59g Caster Sugar 
1 Egg
1/2 tsp Vanilla Paste
1/2 tsp Lemon Essence 
1/2 Lemon Zest & Juice 
407g Self Raising Flour 
145g White Choc Chips



Method:

  • Preheat oven to 160c fan forced.
  • Using the paddle attachment, cream butter, sugars, vanilla, lemon zest and juice until light in colour, thick and creamy.
  • Add in the eggs and mix till well combined.
  • Add in the flour and mix until a dough forms.
  • Mix in the chocolate chips until evenly distributed.
  • Roll 1 tbs of dough into balls, place onto a lined baking tray and slightly flatten. Make sure to leave some space between each cookie. (These don’t spread that much)
  • Bake for 11 minutes. Cookies will remain soft on the inside. If you want a crunchier cookie, bake for a little longer.
