Lemon Hedgehog Slice Recipe

 




One 8 inch

Ingredients:

A



100g Unsalted Butter
200g White Chocolate
395g Sweetened Condensed Milk


1 Lemons zested - small

B

55g Desiccated Coconut
250g Plain Digestive Biscuits

Icing

30g Unsalted Butter melted
115g Icing Sugar
1 Lemon Juiced - small

 

 

Note:

  •     You can double the icing mixture if you would like it to be thicker. But keep in mind this is already sweet.
  •     Skip the lemon add ins to make this a white choc hedgehog!

 

 

 

 

 

 

 

Method:

·         In a pot over low heat, cook A till it has thickened up. Make sure you are stirring constantly.

·         Remove from heat and allow to cool down for 30 minutes.

·         Break up the biscuits into small chunks, then mix A and B together, until everything is well combined.

·         Evenly spread out the mixture into your lined pan.

·         Mix the icing together till it’s smooth, it should be soft and spreadable.

·         Spread out over the top of the slice. You can either leave as is or cover with coconut.

·         Refrigerate for 2 hour or over night before cutting into desired size.
