Ingredients:
100g Unsalted Butter65g Apple Sauce
340g Vanilla Sponge Cake Mix
100s & 1,000s
Note:
·
You can replace the apple sauce with eggs. 1
Egg for the smaller batch and 2 for the bigger batch.
·
You can use chocolate sponge cake mix.
·
You can also add chocolate chips into the
dough or even ½ did the cookies in chocolate once cooled.
·
You can also add in lemon or orange zest.
·
If you want smaller cookies, use 1 tsp and
bake for 12 minutes.
·
And no, you can’t taste the apple sauce.
Method:
·
Preheat oven to 180c fan forced
·
Add butter, apple sauce and cake mix into a
bow and using a spatula or wooden spoon, mix till everything is well combined.
Alternatively, you can use a stand mixer with the paddle attachment.

Roll 1 tablespoon of cookie dough into a ball,
then roll into 100s & 1,000s.

Place onto a lined baking tray, making sure to
leave some space in between each ball. Do not press these down as they will
spread in the oven.
·
Bake for 13 to 14 minutes or until they are
slightly golden brown.
